With pancake day coming up what about this healthier alternative using Tesco Healthy Living Yogurts!

Beat all the ingredients together to form a smooth batter.

Heat the butter in a frying pan and spoon a tablespoon of the mixture in, cooking until bubbles appear.

Flip over and cook until firm, transfer to a plate.

Keep a little butter for frying an serve with a little maple syrup or sugar.
