Preheat oven to 200°C/390°F/gas mark 6. Grease and line a 22cm square baking tin.
Break the chocolate into pieces and melt it either in a heatproof bowl over a pan of simmering water, or in the microwave.
Mix together the flour, sugar and salt, then add the eggs and carrot puree, and combine.
Fold in the chocolate until evenly mixed. If you are adding any nuts or fruit, add them now.
Pour the mix into your prepared tin and place in the oven.
Bake for 10-15 minutes, depending on how gooey you like your brownies.
To make your own carrot puree, wash and top and tail your carrots, chop them, and steam them in a steamer or in the microwave. When they are fairly soft, put them in a food processor and blend until smooth.
