This is a recipe I have learned from my Gran. She has always made us ‘hedgehog‘ potatoes! They are especially good with sausages.
Pre heat oven to 200 degrees Celsius.
Wash and dry potatoes. With a sharp knife slice the potatoes vertically into thin slices, but only cut 3/4 of the way through. The slices should be about 2-3mm.
Place potatoes on a baking tray and sprinkle with a little olive oil and salt. Bake for approx. 1 hour uncovered, checking to see when the potatoes are baked all the way through.
Can be served as part of a main meal or as a snack. No need to add extra butter as the Elfe potatoes have a rich buttery texture.
