A classic speedy supper made more substantial with the addition of ham and cheese and flavoured with a ready-mix of thyme, rosemary, basil, marjoram, oregano and tarragon to give a taste of the Mediterranean. This recipe is an easy leftovers idea from our ham sloppy joes dish. If you'd like to make it from scratch, you'll need 50g (2oz) of leftover cooked ham.

The leftover meat needs to be thoroughly reheated until piping hot and should never be re-heated more than once.

Break the eggs into a bowl and beat together with the herbes de Provence and some salt and pepper.

Heat the oil in a 25-28cm (10‑11in) non-stick frying pan over a medium high heat. Pour in the egg mixture and swirl around the pan. Stir around a little as it cooks, then cook until the top is almost set.

Lay the ham over one half and scatter with the cheese, then fold the other half over. Cook for 1‑2 minutes to heat the ham and melt the cheese. Cut in half and serve with a little ketchup, if liked.
