Shepherd's pie is great served with a little mint sauce.
Preheat oven to Gas 6, 200°C, fan 180°C.
Put a large pan of water on to boil. Peel and dice the potatoes, sweet potatoes and swede and put them in the boiling water. Cook for 10-15 minutes then drain and mash.
Heat a large, heavy-bottomed frying pan, add the oil and fry the carrots, chopped onion, chopped mushrooms, peas, chopped spinach and minced lamb.
In a measuring jug, mix the shepherds pie mix with 300ml (½ pint) boiling water and whisk well. Add this to the meat and veg, stir in well and simmer on a low heat.
Mix the butter and milk into the mashed swede and potato until smooth and creamy.
Place the meat and veg mixture into a large oven proof dish. Top the meat and veg mixture with the mashed swede and potato, spreading it out evenly. Place in the oven and cook for around 20 minutes, until the top is golden brown and slightly cripsy.
Dish up and enjoy!
Nice served with a side of vegetables. (e.g. broccoli and carrots), also serve with gravy if required.
