Grease a 450g (1lb) loaf tin or line with greaseproof paper liner.
Mash the bananas in a large bowl
Add the sugar, butter, egg and vanilla
Stir in the baking powder, flour and xanthan gum
Mix everything well and pour into prepared tin
Bake for gas mark 4 or 180C for 55 minutes until firm and a skewer inserted in the centre comes out clean.
Remember the xantham gum - it really does make a difference to the bread if you're using gluten-free flour.
