Tastes so much better than pre-made potato salad, is quick and easy to make and is ideal for BBQ's and family gatherings.
Boil or steam the potatoes until tender. Drain and leave to cool. Once cool roughly slice into small chunks.
Slice the spring onions and add them to the potatoes. Add the sour cream dip and mix well.
Season to taste with salt and pepper.
Tastes best when left in the fridge for a couple of hours.
