This is a recipe I came across on Pinterest & have fallen in love with.
Slice chicken breast diagonally into 4 - 6 strips. Place strips into bowl with 2 tbspn balsamic vinegar, garlic, 1 tbspn olive oil & a pinch of salt & pepper to taste.
Mix all together & let marinate in the fridge for at least 30 minutes.
When you‘re ready to cook, heat the rest of the olive oil in a frying pan over medium heat. When the oil is hot, cook the strips (along with the marinade), until browned on both sides (about 2 - 3 mins each side). Remove chicken strips to a clean plate when cooked.
Turn the heat down to med-low & add the butter, 1 tbspn extra balsamic vinegar to the pan. Use a spoon to scrape the sticky bits off the bottom of the skillet & dissolve together.
Add the honey, increase the heat & allow the sauce to simmer until thickened (about 3 - 5 mins).
Once the sauce has thickened, season to taste & add the chicken back until warmed through. Serve with a nice salad & chips.
I find 1 chicken breast per person is just about right. You can just use already cut breast strips if you prefer. This is a really nice light summer lunch or dinner. I‘ll upload a pic next time I make this.
