Preheat the oven to gas 6, 200ºC, fan 180ºC. In a bowl, mix the mustard, mint, honey and oil. Add the sausages and toss to coat in the honey mixture.
Transfer to a nonstick baking tray and bake in the oven for 15-20 minutes, stirring halfway, until cooked and sticky. Serve immediately.
