Combine the flour and salt in a bowl. Add the butter, cut into pieces. Rub in the butter until the mixture resembles breadcrumbs.
Add the walnuts and mix well.
Add the milk and honey, and stir with a knife until the mixture clumps together. On a floured board, knead the mixture quickly into a ball.
Put the dough into a plastic bag and refrigerate for 10 mins.
Remove and roll out to around a half-inch thick.
Using a medium sized pastry cutter, cut out rounds and place on a greased and floured baking tray. Gather up the unused dough and re-roll until used up.
Brush the tops with a little milk.
Bake for 7-10 mins at 230C, 450F or Gas mark 8.
