Honey Glazed Roasted Vegetables

As a member of the Orchard at Tesco program I was able to #tryforless and so used the opportunity to experiment with a new recipe as an accompaniment with Christmas dinner, I enjoyed it immensely although my friend felt the honey taste was a bit strong so we suggested trying it with either maple syrup or clear honey next time.

Peel and slice the carrots, parsnips and Brussel sprouts

Dice the bacon

Put the vegetables and bacon in to an ovenproof dish

Melt a teaspoon of honey in the microwave for about 10 seconds and then drizzle over the vegetables and bacon

pour a tablespoon of oil over the vegetables and bacon

Place the dish in the oven on the top shelf, cook for 45 minutes at 240 Celsius

Serve and enjoy
