Preheat the oven to gas 4, 180°C, fan 160°C.
Line a baking tray with foil and spread all the nuts on the baking tray. Sprinkle over the olive oil and add the salt and pepper. Mix the spices into the nuts using your hands.
Sprinkle the sugar over the nuts and drizzle over the honey. Mix all the ingredients together and spread over the tray.
Place in the oven for about 15-20 minutes or until golden brown. Leave to cool for a while and then store them in an airtight jar ready to serve when needed.
