This recipe is perfect when you feel a bit under the weather and/or have just got in from the rain after a long day at work. You don‘t want a fuss just some good hearty tasty food to introduce yourself to the evening. Most of the ingredients you probably already have in your cupboards anyway and it takes very little time to prepare and make, but it‘s the chilly that makes this dish come alive!
Wash potatoes (if required) and stab all over each potato.
Pre-heat oven to about 180 degrees.
Place potatoes on heat-proof dish and cook on highest setting in a microwave for approx 9 and a half mins.
Remove from microwave and place in oven and bake for a further 15 mins or until visibly golden.
Whilst the potatoes are baking get a small pan and pour about 2 servings of frozen veg into it.
Pour in some boiling water and approx 4 or 5 teaspoons of gravy granules and say 20 or so twists from the chilly grinder. Simmer gently until the desired consistency has been achieved.
Take out 2 heatproof bowls.
Slice each potato with a cross and place one into each bowl.
Pour out lashings of gravy into each bowl and sprinkle the grated cheese onto each equally.
Place both dishes back into oven and bake for a further 10-15 mins at which point the cheese will have melted and gone all golden and slightly crispy.
Remove from oven, place bowls onto two plates and serve piping hot. The consistency should be gloopy and hot to the taste.
Stab potatoes all the way through a few times on all sides to make the potatoes even fluffier.
Leave the gravy till near the end when the potatoes are nearly ready and remember to keep stirring otherwise it‘ll stick to the bottom or go lumpy...unless you like lumps, in which case it‘s fine.
