Preheat the grill.
Place the salmon on a grilling tray and spread with 1tsp each of oyster and soy sauce. Grill for 2 minutes. Turn the fish and repeat.
Drop the noodles into a large saucepan of rapidly boiling salted water. Add the ginger, spring onion and chilli to the water. Cook according to packet instructions.
Drain the noodles and toss in a serving bowl with the oil. Stir in the sweet chilli sauce and remaining oyster and soy sauces. Top with the salmon.
Tip: Add chilli seeds or extra sauce to make the dish spicier.
