Irish Tea Brack recipe

Brings back lovely memories of Saturday afternoon‘s at home when the kitchen smelled good enough to eat! Happy times.

Line 2 loaf tins with baking parchment. Fully preheat oven to 180 degrees celcius. Put the raisins and sultanas into a bowl, cover with strong tea and leave overnight to allow the fruit to plump up. Next day, add the cherries (halved), peel, sugar and egg and mix well. Sieve the flour and baking powder and stir in thoroughly. Add whiskey. The mixture should be softish so add a little more whiskey or tea if necessary. Divide the mixture between the tins and bake for 40-50 minutes until a skewer comes out clean. Traditionally served sliced and buttered.

Peel baking parchment off while still hot. Alternatively use silicone tins and parchment will not be necessary.
