Arrange the celery slices in the base of a serving bowl. Combine the tomato, onions, torn basil and cubed bread in a separate mixing bowl, tossing well to combine. Dress the mixture with the olive oil and season generously as well.

Spoon on top of the celery and garnish with the basil leaves before serving.
