This simple dish looks so impressive that no one will ever guess it’s made from leftovers. This recipe is a mouthwatering leftovers idea from our mustard crusted roast topside with herby Yorkshires dish. The leftover meat needs to be thoroughly reheated until piping hot and should never be reheated more than once.
Heat the oven to Gas Mark 7, 220ºC, fan 200ºC. Take each slice of beef, place a little mozzarella and a pinch of oregano inside, then season with salt and pepper. Roll up and put into a small ovenproof dish. Repeat with the rest of the beef. Use about 3/4 of the mozzarella leaving the rest for the top.
Heat the tomatoes gently until hot through in a small pan, with a pinch of sugar and some salt and pepper, pour this onto the beef. Scatter the breadcrumbs and shred the rest of the mozzarella on top. Cook for about 10-12 minutes, until golden and bubbling. Serve with mixed leaves, or crusty bread if you like.
