Preheat the oven to 180ºC/350ºF/gas 4.
In a large casserole-type pan slowly fry the onion, garlic and chilli
When the onion is golden add diced carrot, courgette and celery
Add the minced beef to pan. When slightly brown add 2 glasses of red wine
Simmer for 5 minutes then add the tin of chopped tomatoes, basil and parsley
Leave to simmer. Meanwhile make the white sauce. Melt the butter in a pan, then stir in the flour to make a roux. Whisk in the milk and bring to a simmer until creamy and thick.
In an ovenproof dish, layer the mince between layers of the lasagne. When you reach the final layer of mince, cover with the pancetta followed by white sauce. Top with grated cheese
Cook in oven for 20 minutes until cheese has turned golden brown

Whisk white sauce continuously to avoid it getting lumpy.

A teaspoon of Mustard (English) can compliment the white sauce.
