Jacket Potato loaded with Ricotta and Tomato recipe

Fond of quick, easy meals!

Preheat the oven to 200 degrees C, rub the potatoes with a little olive oil and place on a tray to bake for around an hour (until they are soft when pierced with a knife)

In the meantime, mix the tomatoes in a tablespoon or so of olive oil and the salt and pepper and add these to the oven 15 mins before the potatoes have finished (until they start to split)

Slice the potatoes with a cross shape, and top with the ricotta cheese, roasted tomatoes and thyme.


For those in a rush, cook the potatoes in the microwave for 5 mins each before putting them in the oven and half the baking time.
