Add flour, salt and caster sugar in a large bowl.
Beat eggs, 100g melted butter and vanilla extract.
Stir the eggs gently under the flour, don‘t over-mix.
Line muffin tin with cases.
Spoon half the dough into the case.
Add a teaspoon of jam to the centre of each muffin then add the remaining dough.
Bake for 20 minutes at 200 ‘C
Melt the remaining 100g butter and put in a shallow bowl, Put the granulated sugar into a shallow bowl. Spray with the Shimmer spray. Dip into the melted butter than roll in the sugar.
I used my rose muffin form to make the tops even more beautiful.
