Preheat the oven to 180c, gas mark 3 and grease a large baking tray.
Filling- Fry the onion and garlic in the oil until soft.
Add the ginger and mince (if using), add the vegetables and tinned tomatoes, and cook until they are soft.
Season with salt and pepper, then let the filling cool slightly.
Pastry- Sift the flour, salt and turmeric into a bow.l
Rub in the butter with your fingertips until the mixture looks like breadcrumbs.
Add 5-6 tsp of cold water to make a stiff dough, knead gently until smooth.
Roll out the pastry to about 5mm thick. Using a saucer as a template and a small sharp knife, cut out 4 circles.
Put the circles on the baking tray. Brush the edge of each with beaten egg.
Place a small amount of your cooled filling in the centre of each pastry circle.
Cook for 12 minutes. Can be eaten hot or cold.
