Pre-heat the oven to 180°C/ 350°F/ Gas Mark 4 and grease and line a 450g loaf tin with nonstick baking paper. Place the bananas, 125ml (4fl oz) water, egg, soft brown sugar and oil in a food processor and whizz together until smooth. Add the flour, cinnamon and mixed spice and process again. Add the walnuts and raisins and just pulse the food processor for 10 seconds.
Bake for 40 minutes or until set and firm. Cool for 5 minutes before turning out on to a wire rack to cool.
