Jambalaya recipe

Dry fry chorizo sausage for 4-5 mins, add an onion and red pepper. Fry for another 5 mins.

Stir in rice and stock and leave to simmer for 10 mins. Stir in tomatoes and prawns and simmer for another 5 mins until everything is cooked.

Spinkle with coriander to serve.

  • 500ml chicken stock
  • 1 tin of chopped tomatoes
  • 200g king prawns
  • 1tbsp chopped fresh coriander
