Jubilee Cheescake recipe

Grease a 6 1/2 inch loose based tin

Measure 1 tbsp cold water into a basin and add gelatine

Melt butter and crush biscuits

Place biscuits in a bowl and mix with sugar and butter

Press crumb mixture into the tin and leave in the fridge to harden

Melt gelatine in a bowl over a pan of boiling water

Grate the lemon and orange

Peel and de-seed the lemon and orange and blend the fruit in a liquidiser

Add the cottage cheese, sugar, grated lemon/orange and melted gelatine to the liquidiser and blend until smooth

Pour the cheesecake mix onto the biscuit base and refrigerate until set
