We were invited to a Jubilee party last Monday, and were asked to bring along a dessert I decided to make a Jubilee Jack for the occasion!
separate egg whites, reserve yolks for another recipe
whisk egg whites until firm peaks form
add caster sugar, 1 large spoonful at a time
whisk until glossy and firm
line a baking tray with greaseproof paper, lightly oil and spread on meringue mixture to form your Union Base.
preheat oven to Gas Mark 2, place in oven and immediately reduce to GM 1, cook for approx 2.5 hrs. Turn off the gas and leave as long as possible to dry out.
Whip cream, clean fruit and decorate accordingly.
use fresh eggs at room temperature
use a glass or ceramic bowl to mix ingredients
use a metal spoon to add sugar
allow meringue base to dry out over night in the oven if at all possible, but otherwise until cool, before adding cream
