My girls and I invented these for a party last year. The lovely helping me make and assemble. Such a simple recipe and fun for all. Perfect for any Jubilee party!
Preheat over to 160 C. Grease and line bottom of rectangular baking tray. With 2 inch side. Can use baking tray too...
Cream sugar, oil & butter together until fluffy.
Then add 1 egg at a time then add vanilla
Gradually fold in flour.
Pour into prepared pans and pop in oven 20 - 25 min. Keep an eye on and test after 15 min with toothpick in centre
Cool on rack before cutting into shapes
Whilst cakes are cooling whip cream with 2 tbls caster sugar and a dash of vanilla. Slice strawberries and pick over mint for smaller leaves
Circle cutter needed. Cut and place on wax paper before assembly. When you assemble take 2 round cakes and spread 1 cake with strawberry jam. Then pipe whipped cream on other cake and sandwich together. Place a small blob of cream on top to hold fruit in place. Dust with icing sugar.
