My son and I made this tart as a practice run for the Queen's Jubilee!
Put the olives, garlic, capers, oil and lemon juice into a food processor and mix together. Don't blend too much - the tapenade should still be a little chunky
Roll out the pastry onto a baking tray, trim if necessary and score about an inch in from the edge. Pierce all over with a fork.
Spread cream cheese all over the middle section, then add the peppers and tomatoes to make a Union Jack design. Spoon on the olive tapenade to fill the gaps.
Bake at 190º for 20 minutes until golden.
