Kawaii Chocolate Brownies

This is my own recipe that i‘ve been tweaking since i found a simple generic brownie recipe about a year ago in my auntie‘s BeRo book. I changed ingredients and quantities, cooking techniques and allsorts. In case you were wondering Kawaii means cute or adorable in Japanese, and is a word i use often :) These brownies are perfect for any occasion; parties, deserts and i make them for my 2year old cousin. He adores my brownies and insists i make them everytime i see him. And that‘s my Kawaii Chocolate Brownies!

Step 1) Using a glass bowl, preferably, melt the butter and chocolate(broken up into squares) over a pan of water on a medium heat. i find it‘s best to put them in all at once but if you want to melt the chocolate first and then melt the butter into the melted chocolate, that works just as well :) After everything has melted completely allow to cool for a few minutes.

Step 2) Sieve the sugar into a mixing bowl while your chocolate and butter cools. As you sieve you‘ll find small darker bits of sugar and i try and take most of these out but it doesn‘t matter if you miss a few!

Step 3) Mix together the sugar and the melted butter and chocolate. Afterwards add 2 teaspoons of the Nutella, the tablespoon of Golden Syrup and the cap/half teaspoon of vanilla essence and mix again!

Step 4) Now add the Eggs. add 1 egg at a time allowing about 20-30seconds of mixing to ensure the egg is combined well, just don‘t overmix we don‘t want scrambled eggs!

Step 5) Now add the salt and self-raising flour! add the flour(no need to sieve) a couple of tablespoons at a time mixing well till any visible trace of flour is gone.

Step 6) Now add another teaspoon of Nutella and mix well before adding the Chocolate Chips.

Step 7) Empty the mixture in to a greased(used some of the butter you used to earlier when melting) shallow baking tray. the tray i use is about and inch and a half deep, 21cm by 30cm, it‘s the perfect depth for the brownies. don‘t worry if the mix spreads abit thin in the tin at first, it rises while in the oven, but make sure you can‘t see the bottom of the pan and the mixture reaches the corners.

Step 8) Cook for 20 minutes on 180degrees/gas mark 4. While the browines are cooking eat the other spoon of Nutella!!! after 20minutes use a butter/blunt knife and stick it into the brownies. if it comes out clean take them out of the oven but if some mixture sticks to the knife allow a few more minutes cooking. keep doing this until cooked :)

Step 9) When cooked, cut into bitesize squares straight away and then allow to cool, or sample a few Kawaii Brownies while they‘re still warm!

(HANDY HINT! On step 1, make sure the water in the pan doesn‘t touch the bottom of the pan so the chocolate doesn‘t burn.)

  • 100g Butter(any cheapy brand from the supermarket is best!)
  • 100g Plain Chocolate
  • 100g Soft Brown Sugar(either light or dark works fine!)
  • 2 Eggs
  • 4 teaspoons Nutella!
  • 1 tablespoon Golden Syrup
  • 1 cap/ half teaspoon Vanilla Essence(or extract, whichever you have in your cupboard)
  • a pinch Salt
  • 100g Self-raising Flour
  • as many as you want! Chocolate Chips(milk or plain are best)
