Refreshing, fizzy and delicious - this cocktail is so simple to prepare. To get ahead of time, chill the muddled ingredients until needed and top with ice and soda before serving. If you’re wanting to make it alcoholic, rum or vodka work well with this recipe. 

In a large jug, combine 4 peeled and diced kiwis, 3 tbsp demerara sugar, the juice of 4 limes, and a handful of mint leaves; muddle (mash) together.

Add ice cubes and give everything a good stir. Top up with 600ml (1pt) soda water and pour into 8 chilled tumblers. Serve.
