Pre-heat the oven to 220°C.
Line a baking sheet with nonstick baking paper.
In a large bowl, combine the lamb, spices, seasoning, chopped mint and egg yolk until well combined. Using oiled hands, take tablespoons of the mixture and roll between your palms to make balls.
Thread two balls onto two skewers, piercing the balls through their centres with the skewers. Bake the skewers for 12-15 minutes until golden brown in colour. Remove and allow to rest for a few minutes before placing in serving bowls. Sprinkle with the sesame seeds and garnish with lemon wedges and a sprig of mint leaves before serving.
