This recipe is easy to prepare and is cooked in one dish so less washing up!
Trim and cube lamb and season with salt and pepper. Heat the oils and brown the lamb, transfer to a casserole dish. Add thickly sliced carrots, chopped onions and stir in rest of ingredients adding the stock cube mixed with 500mls water. Slice potatoes , layer on top of meat and season with pepper. Cover and cook 170C 1 hour then remove lid and cook for further 45 mins.
May need less liquid if gravy looks to thin.
