Toss the cubed lamb with the garlic, lemon juice, a little oil and salt and pepper and leave to marinate for up to 30 minutes.

Thread the lamb onto skewers, alternating with the tomatoes and sage leaves. Sprinkle a little seasoning over. Cook over hot embers for 8-10 minutes until the lamb is rose pink inside and charred outside.
