Peel and deseed the cucumber, wrap in kitchen towel to remove moisture. Then chop cucumber into small pieces.
Crush the garlic and squeeze the lemon juice into a bowl
Add the yoghurt to the bowl along with the cucumber and combine. Sprinkle with paprika and place in fridge for when you are ready to use
For the koftas, place the lamb mince. corriander, chilli, cumin, mint and crushed garlic into a bowl and mix together
Take a scoop of the mix and mould into a sausage shape and then mould around the skewer
Brush each kofta with a little oil before grilling
Grill under a high heat for 3 to minutes on each side or place in the oven for 15 mins on a baking tray at 180 degrees
Serve the kofta with the tzatziki, toasted pitta breads and pimento olives.
Pre soak your wooden skewers in water to prevent them burning under the heat when cooking
