Preheat the oven to 200°C / Gas Mark 6. Mix the glaze ingredients together. Rub on to the lamb rack and leave to stand for 15 minutes. Place the lamb rack in a baking dish and cook for 25-30 minutes (medium). Remove and leave to rest for 5-8 minutes before slicing the rack into double cutlets.
