Preheat oven to 200°C / Gas Mark 6. Combine glaze ingredients in a bowl and coat the lamb roast. Leave to rest for 15 minutes. Place lamb in a ceramic baking dish and bake 30-40 minutes (medium). Remove from the oven and leave to rest for 10-15 minutes.
