Cut your lamb into small cubes and brown in a frying pan
Whilst lamb is cooking take you apricots and onion and chop them up
Once lamb is browned add apricots, onion and tinned tomatoes to pan. Place lid on and allow to cook for 1-2 hours.
Ensure lamb is fully cooked and serve with cous cous.
Slow cookers: brown lamb then place all ingredients into slow cooker apart from cous cous and allow to cook. Low 6-8 hours or high 3-6 hours depending on the cut of meat.
