My mother made this on special occasion. We love apple pies.
Peel and chop the apples. Place the fapple and sugar in a pan. Gently simmer the fruit till soft. Leave to cool.
Grease a 25cm pie plate. Roll out half of the pastry. Line the bottom of the pie plate. Spread the cold apple filling on the pastry base.
Roll out the rest of the pastry. Cut into strips. Arrange the pastry strips in a lattice pattern on the pie. Trim off excess pastry.
Bake the pie in an oven 190C375F/Gas mark 5 for 25-30 minutes. Remove he pie from the oven. Leave to cool. Sprinkle the top with caster sugar. Serve with clotted cream or ice cream. Delicious.
This pie is delicious when serves warm.
