This is something that my mother used to make when we were children, and is something I still eat now.
Peel and dice all vegetables, place in a large saucepan with the chicken stock cubes, waters, and mixed herbs. Simmer until they are soft, approximately 15 minutes. Blend until smooth. Serve in a bowl with the parmesan cheese sprinkled on top. Season to taste.
Nice for a cold day, served with crusty bread.
