Heat a medium sized 23-26cm non-stick ovenproof frying pan over a medium heat. Add the Lurpak Cooking Liquid followed by the sliced leeks and chorizo and sauté for 5 minutes stirring occasionally.
Pre-heat the grill to high and in a large bowl, whisk together the eggs, basil, chilli flakes and seasoning. Add the egg mixture to the sautéed leek and chorizo and allow to cook for 1 minute without stirring. Place the pan under the grill and cook for 3 minutes or until golden brown.
Transfer the frittata from the frying pan to a serving plate using a spatula. Slice into wedges and garnish with a handful of rocket. Consider adapting this recipe according to what's in your fridge - cheese, bacon, peppers, and spring onions all work well.
