Leftovers Potato Cakes recipe

This is something I made up to use up leftovers, I suggest you experiment with different combos to find your fave!

Boil leftover sprouts, carrots, parsnips etc. until very soft. Also boil potatoes.

Mash all of the vegetables and mix together.

Chop onion into small cubes and fry until caramelised and add to veggies mash.

Form patty shapes from the veg mix.

Dip in beaten egg and then in flour.

Shallow fry until crisp and brown on outside and serve!

Leftovers potato cakes is a great way to use leftover cooked veg and even pop some flaked meat in or vegetarian equivalents if you want!
