A simple recipe passed on to me by my Mum.
Pre-heat the oven to 180 oC
Grease a piece of kitchen foil (large enough to completely wrap the salmon fillets) with olive oil.
Place the salmon fillets on the greased foil. Sprinkle with lemon juice, mixed herbs and black pepper.
Fold up the foil so the salmon fillets are sealed inside it.
Place on a baking tray and cook for 20 minutes, until the salmon is cooked through.
Serve with vegetables of your choice. I made sweet potato wedges and steamed veg.
