This salad is great for picnics or packed lunches – don’t forget a fork though! This recipe is a time-saving leftovers idea from our ham sloppy joes dish. If you'd like to make it from scratch, you'll need 200g (7oz) of leftover cooked ham.

Bring a large pan of water to the boil and cook the pasta according to the packet instructions. Drain and set aside to cool completely.

Make the dressing by mixing together the lemon juice, mustard and oil in a small bowl. Season to taste.

In a serving bowl mix the cooled pasta with the sweetcorn, olives, tomatoes, basil and ham. Pour the dressing over and stir well to coat.

  • 95g (3 1/2oz) sweetcorn, drained
  • handful pitted black olives
  • 150g (5oz) cherry tomatoes, halved
  • handful basil leaves, shredded
  • 200g (7oz) leftover cooked ham, finely sliced
  • For the dressing

  • 1 lemon, squeezed
  • 2tsp wholegrain mustard
  • 2tbsp olive oil
