Preheat the oven to 200C.
Grate the lemon zest, and mix together with pesto and breadcrumbs.
Press the breadcrumb mixture all over the top of the salmon fillets. Place on a baking sheet.
Bake for 10-12 minutes until the crust is golden and the salmon cooked
Serve with steamed tenderstem brocolli and a wedge of lemon
You can also serve with new potatoes with parsley butter.
