Lemon and Rosemary salmon with broccoli and mash

Start preparation by boiling a pan of salted water and turning oven to gas mark 6 / 200c. Start peeling potatoes and cutting into even pieces. Chop broccoli and slice lemon into at least six slices. . After water is boiling add potatoes.Have two pieces of foil that will cover salmon ready.

Place salmon on foil and season with salt and pepper. Lay the lemon slices evenly over salmon pieces. get your sprigs of rosemary and pull off the leaves and place over salmon. one sprig to each salmon.

After potatoes have boiled for five minutes put salmon in oven. Salmon should take 15 minutes.

Boil some water in a pan and add broccoli. Broccoli should take 8-10 minutes.

when potatoes are easily cut with a knife drain them. put back in empty pan and mash. Add salt,pepper,butter,milk and cheese (save some cheese for on top). Mash together til smooth.Transfer mash to a oven dish and top with cheese. pop in oven til cheese melts.

Take salmon out of oven when the fish is opaque and mash out when cheese has melted. Drain and season broccoli then serve.

Use a kettle to boil water faster.

  • 2 tbsp butter
  • 100g Red cheddar style cheese/mild cheddar
  • To season Salt and pepper
  • 500g White Potatoes
