First make the stuffing by placing some bread in a food processor, pulse until crumbs. Then add jucie of 1 lemon, thyme and 1 egg. The stuffing must be quite dry but wet enough so it holds in the cavity of the fishes belly.
Stuff the fish then lay on grease proof paper, which has been buttered. Top the fish with slices of lemon and some thyme and then rap in the grease proof paper, like a parcel. Bake for 30mins or until cooked, the flesh should spring back when pushed with a finger.
Put on plate when cooked, add some bread and butter and serve!
