lemon blueberry polenta cake

Mix polenta, spelt flour, baking powder,baking soda, salt together.

Melt coconut sugar and butter.

Mix lemon juice together with the sugar butter combination and add to dry mixture.

Beat together 2 eggs and add to the mixture.

Bake at 180C for 30-40 minutes or until toothpick comes out clean.
