Lemon Coriander Chicken

Cut the chicken breasts into 2.5cm (1 inch cubes).

Heat the oil in the frying pan and fry the chicken for 5-7 minutes and are golden brown. Meanwhile, whilst the chicken is frying, chop the fresh coriander. Pour the lemon juice over the chicken, stir for 2 minutes and then add the chopped coriander (optional, add the crushed chilli's).

Once the chicken has absorbed most of the lemon juice, add the butter and stir.

Serve when cooked.

  • 60g fresh coriander
  • 1tbsp olive oil
  • pinch crushed chilli's (optional)
