Peel and chop 750g white potatoes, place in a large pan, cover with water and add a little salt. Bring to the boil and cook for 15 minutes or until cooked through. Drain and return to the pan. Mash with 2tbsp milk, season and stir through ½ bunch sliced spring onions.
Place the meat from 1 x 660g pack pork loin steaks in a bowl and rub with 1tbsp oil, zest and juice 1 lemon, salt and pepper. Leave to marinate for 5 minutes. Heat a grill or griddle pan until hot and cook the pork for 4–5 minutes per side, or until cooked to your liking. Serve with the mash and any meat juices.
