Lemon Honey Cake

The lemon and honey goes really well together. I love making this cake with the children because it i sso easy to make.

Prepare and grease a loaf tin 20cmx10cmx6cm.

Rub butter and flour together. Add sugar, beaten egg, lemon juice and ½ of the lemon rind. Stir well with a spoon. Transfer the mixture into the prepared loaf tin. Bake in oven for 1hour at Gas 4 /180C 350F until a wooden skewer inserted into the centre and come out clean. Leave to cool.

Dissolve the honey with 2 tablespoon of hot water. Add in the rest of the lemon rind. Heat in the pan till the honey goes thick and syrupy. Pour the mixture over the cake. Leave to cool.
