used to use it on the school dinner menu, when I was a dinner lady, it was one of the childrens favourites.
mix the flour margarine sugar altogether in a mixer until it becomes solid, then roll it into 2 sausage shapes, with one slightly bigger than the other, then get a shallow baking tray, cut grease proof paper to fit then grease it, then slice the smaller tube of short bread into slices and cover the baking tray sprinkle the short bread with a bit of flour then use the back of a dessert spoon to press the mixture flat to cover the bottom of the tray, now spread the lemon curd evenly over the short bread,then do the same as you did with the bottom of the tray with the top even spread the short bread so that it covers the lemon curd and is flat, then bake in the oven on top shelve until it starts to brown ,when cooked it should feel quite soft to the touch,sprinkle with caster sugar and serve hot with custard.
if the mixture doesn't seem to come together add a bit more margarine, if you have a small rolling pin that fits inside your baking tray use that to roll out the short bread instead of a dessert spoon.
